NFFF Training Courses
Our comprehensive training courses are perfect for both newcomers to the industry as well as seasoned Fish Friers who are looking to accelerate their learning making their business more profitable and rewarding. We have a team of dedicated tutors all of whom have been successful in the industry winning awards and the respect of other fish fryers nationwide. Their knowledge, tips and tricks are invaluable and come from their many years of experience and award winning skills.
No matter how long you have been in the industry there is always room to pick up some extra knowledge!
One Day Courses
Our one day course is designed for people with existing catering or food retail experience but no practical knowledge of fish frying so we tailor this course directly to their needs concentrating less on the food hygiene aspects as this should already be known by the student.
The syllabus is purely practical and includes:
- Fish, potato and batter: selection and preparation
- Types of oils and fats
- Hands on cooking including correct frying temperatures, range management and portion control

Three Day Training Course: NFFF Complete Guide to Fish and Chip Shop Management
Developed in conjunction with Seafish, this comprehensive course provides an overview of the industry and is ideal for new entrants to the fish and chip industry combining theory with practical skills over three days.
The syllabus is both theory and practical and includes:
- Product sourcing
- Fish, potato and batter: selection and preparation
- Types of oils and fats
- Hands on cooking including correct frying temperatures, range management and portion control
- Oil management
- Food hygiene
- Health and Safety requirements
- Managing accounts
- Dealing with VAT
- Customer service
