Welcome to the NFFF Training Academy

The NFFF Training Academy lecture room refurbishment was completed in the summer of 2015. This has created a fantastic facility which is bright, modern and further enhances the learning experience for the students. Along with a fully equipped preparation and frying room, the NFFF Training Academy provides the perfect venue for both new starters and existing fish and chip shop personnel to learn new skills and gain further knowledge about the amazing fish and chip industry!

Complete guide to fish & chip shop management

3 day course

Developed in conjunction with Seafish, this course is ideal for those who are new to the industry, whether you’re buying your own business or managing a business for someone else. This course teaches the theory plus lots of practical skills and also includes the opportunity to sit the Level 2 Food Safety in Catering and/or Health and Safety in the Workplace exams.

A practical guide to fish frying

1 day course

This course is designed for those with some previous catering experience but no practical knowledge of fish frying. The syllabus will cover the practical elements of the business. Held at our fully equipped Training Academy in Leeds, this is the perfect course to introduce you/your staff to the best techniques of the fish frying process. You will also get the latest industry information and increase your industry awareness.

Bespoke courses – tailored to your requirements

Training for you or your staff by an approved representative of the NFFF, either in your own shop or at the NFFF Training Academy in Leeds.
This course can be tailored to your needs and can include practical areas such as potato and fish preparation, frying techniques and oil management, how to improve sales and market your business or how to prepare for the NFFF Fish & Chip Quality Award. Our trainers can also include any other aspect of training that would be of benefit to you.

In Shop Training

Bespoke training tailored to your requirements. An NFFF approved trainer will conduct six hours of training at your fish and chip business, at a date and time that is convenient to you. Adopting this approach means that the trainees can be taught in an environment that they are used to working in, with machinery and equipment that they feel comfortable with. Another benefit of a fish and chip shop undertaking in shop training is that they can request for the approved trainer to focus on specific areas within their business.

Room Hire

The NFFF boardroom and lecture room are both multipurpose rooms suitable for training and meetings.  These rooms provide a professional and relaxed setting.

Team Building Experience Days

The NFFF Training Academy provides the perfect facilities for you and your business colleagues to host a team building experience day. Our boardroom and lecture room can be used to conduct group exercises with free Wi fi access and the use of a Smart TV. Why not incorporate a practical cook off using our wet preparation and frying rooms?

Safety Workshops

The NFFF holds regular First Aid, Fire Safety and Manual Handling training workshops which are delivered and accredited by third parties.

Level 2 Food Safety & Health and Safety Qualifications

These nationally recognised qualifications are accredited by the Chartered Institute of Environmental Health (CIEH)

BD Signs Nottingham provided digital menu systems for the Training Academy which provide students with the opportunity to experience the technology avilable to not only to present the food they will be selling in their shops but also to educate customers while they wait for their orders.
Blakeman's Blakeman's

Blakeman's sponsored the chef jacket and headwear worn by the NFFF trainers and students along with the SMART flat screen TV used in the lecture room. One of Europe's leading manufacturers of sausage and meat products, the Blakeman family has supplied domestic and export catering and fast food markets for over 50 years.

Collins Seafoods providing tea towels for the Training Academy and for each student attending the Training Academy. With over 30 years in depth market knowledge of supplying fish and chip shops across northern England, they are able to offer guaranteed delivery and high quality sustainable frozen at sea fish.



Drywite provided various equipment and utensils to support the preparation and cooking of fish and chips at the NFFF Training Academy. They are providers of numerous products to the catering industry and specialists in products for fish frying.

Elite Shopfitters completed the NFFF Training Academy lecture room refurbishment. Based in Leeds, they offer a UK-wide shop fitting service to the catering industry.

EPOS Group

EPOS Group provided a new electronic point of sale system. Since 1971, they have grown steadily to deliver national and local sales and service support coverage to their customers.

Kerry Foodservice

Kerry Foodservice sponsored the preparation room, frying room, lecture room and exam room at the NFFF Training Academy. This included the purchasing of new tables and chairs for the lecture and exam rooms. They are suppliers of Goldensheaf and Henry Jones batter mixes along with Dinaclass curry sauces and gravy.

Mallinson's installed a new counter style traditional frying range. Based in Oldham, their name has been seen on frying ranges in thousands of establishments throughout the UK and many parts of Europe.

Martyn Edwards/Frank Ford have provided a wall style high efficiency frying range. Based in Redcar, they are proud to make the very finest fish and chip frying equipment.

Middleton Foods

Middleton Foods provide the NFFF Training Academy with various commodities. Middleton's manufacture Batters, Curry, Gravy and Chicken Breading's and supply nationwide through a network of suppliers.



Nortech provide the NFFF Training Academy with their "Superior” brand beef dripping. Based in Doncaster, historically the company is best known for Beef Dripping and Lard in own labels and well-known brands. Nortech understand customer’s needs in delivering quality products, services, and value and they pride themselves on customer service and transparency with an honest approach in meeting their client’s requirements across their range of products.

T. Quality sponsor the NFFF Training Academy with many of the commodities used in the trade from Frozen at Sea Haddock and Cod to marrowfat peas used for the students mushy pea preparation. T. Quality delivers a variety of foodservice products for Fish and Chip Shops, Fast Food Outlets and the Pizza and Kebab trade through to the Wholesale Fish market across 10 depots nationwide.
