NFFF Tutors

The Federation offers a number of different Training Courses to offer all those interested in a career in the Fish and Chip catering industry.
 
For example our One Day Courses are generally designed for people with existing catering or food retail experience but often no practical knowledge of fish frying. This allows our Tutors to concentrate on the practical aspects of fish and chip production without having to spend lots of additional time teaching food safety techniques etc as these should already be known to the students.
 
Our Three Day Courses however offer every single insight into the industry, like our NFFF Complete Guide to Fish and Chip Shop Management Course. This three day course is developed in conjunction with Seafish and provides a comprehensive overview of the industry making it ideal for new entrants to the fish and chip industry as it combines both theory with practical skills.
 
Running our courses are a selection of some of the very best Tutors in the industry each with their own specialist skills as well as many years in the Fish and Chip industry.

Craig Buckley - Head of Training
Craig Buckley

Craig is an NFFF Regional Director and Head of Training at the NFFF Training Academy. Craig bought his first shop, the Fish Bar in Crewe in 2009. He achieved the title of Drywite Young Fish Frier of the year in under 2 years of entering the industry. At the 2016 National Fish and Chip Awards The Fish Bar won the Field To Frier Award.

The Fish Bar is a current NFFF Quality Award holder as well as holding a 5 star FSA food hygiene rating.

Des Anastasiou - Trainer

Des co-owns Burton Road Chippy in Lincoln alongside NFFF Regional Director Lesley Graves. Des has been in the fish and chip industry for 36 years, owning 6 fish and chip shops along the way.

Burton Road Chippy is a current NFFF Quality Award holder as well as holding a 5 star FSA food hygiene rating and being MSC certified. They have won numerous other awards including Independent Restaurant of the Winner 2015, Staff Training & Development Winner 2015, NFFF Quality Award Champion Winners 2016 plus many more.

Tim Barnes - Trainer

Tim, a trained chef, co-owns Exmouth based Krispies Fish and Chips alongside his wife, Kelly. Tim has been involved with the industry for over 18 years and would like to pass on the passion, knowledge and experience to people entering into the trade.

Krispies Fish and Chips currently hold the NFFF Quality Award, a 5 star FSA food hygiene rating and is MSC certified.

At the 2017 National Fish and Chip Awards, Krispies won the Field to Frier category. This award focuses on how potatoes come from the ground to the plate in the form of chips.

Peter Beedle -Trainer

Peter owns Beedle Chippy in Bishop Auckland, County Durham. Peter has been working within the fish and chip industry for the past 26 years and has experience in running multiple sites having once owned and run 5 shops.

Beedle Chippy has held the NFFF Quality Award since it originally formed in 1995 by Seafish. Alongside the NFFF Quality Award, Beedle Chippy has been named in the Fry Magazine Top 50 in 2015, and has been the Regional Winner for the North East at the National Fish and Chip Awards in past years.

Darren Boothrody - Trainer

Darren grew up in his family’s fish and chip shop businesses in Yorkshire and Lancashire. He now owns and runs the award winning Fochabers Fish Bar in North East Scotland.

Fochabers Fish Bar holds the NFFF Quality Award and Darren is also a Quality Award assessor. Fochabers holds many awards including: Scotland’s Apprenticeship Micro Employer of the Year 2015, Fry Magazines top 50 shops 2015 and 2016, Staff Training and Development Finalist 2017, Regional Winner and Top 10 Finalist and Scotland’s No1 2017, Quality Award Champion Award Winner 2017, Fochabers also holds Investors in Young People and MSC accreditation.

Lynda Fielding - Trainer
Lynda Fielding

Lynda has been in the fish and chip industry since 1981, during which time she has run three shops. Her present business, Belfield's of Burnley has twice won the Regional Fish and Chip Shop of the Year accoladein the Seafish National Fish and Chip Awards.

 

Lynda has been involved with the National Federation of Fish Friers for over 30 yearsas an official with her local association branch and nowthe North West Area association.

 

As well as her tutoring role with the Federation in Leeds, she has been an assessor for the NFFF Quality Award for many years and is also an assessor for the Fish Frying and Customer Service Skills qualifications endorsed by both Seafish and the NFFF.


 

Alan Hanna - Northern Ireland Lead Trainer

Alan co-owns Pit-Stop Fastfood Limited alongside his wife Catrina. Alan founded the business 27 years ago and has been a member of NFFF for the past 17 years. Alan has been Northern Ireland Regional Director for 6 years and is an NFFF Fish and Chip Quality Award Assessor, he also runs the first NFFF Approved Training Hub at his premises in Kilkeel. Alan also represents the NFFF on Seafish Sniac Boardand the NI Seafish Training Network.

Pit-Stop has won many accolades over the years including Seafish Fish and Chip Shop of the year Regional Winner on four occasions and LCN NI Winner Fish and Chip Shop of the Year 2013 and 2014. Pit-Stop also holds NFFF Fish and Chip Quality Award and maintains a 5* Hygiene Rating.

Dan Harding - Trainer

Dan is the co-owner of Angel Lane Chippy & Sandgate Friery in Penrith, Cumbria. Dan has been involved in the fish and chip industry since the age of 15 and started as a pot washer has since worked his way up within the industry. He achieved the title of Drywite Young Fish Frier of the year in 2010-2011.

Angel Lane Chippy & Sandgate Friery are current NFFF Quality Award holder as well as holding a 5 star FSA food hygiene rating.

James runs Our Plaice Fish and Chip shops in Hagley and Kidderminster in Worcestershire alongside running a mobile trailer. He has been involved in the industry for 9 years starting as potato boy whilst at school.

 

Our Plaice are current NFFF Quality Award holders and 5 star FSA food hygiene rating holder in both shops the Hagley shop in MSC certified. James is passionate about the fish and chip industry and wants to pass his knowledge on to anyone getting involved within the industry.

Gregg Howard - Trainer
Gregg Howard

 

Gregg owns Our Plaice Fish and Chip shops in Hagley and Kidderminster in Worcestershire and Chip Shed in Warwick alongside owning a mobile trailer. He was been involved in fish and chips all his life, when his parents started their business in 1968.

Our Plaice are current NFFF Quality Award and 5 star FSA food hygiene rating holders in both shops The Hagley shop is MSC certified and won Independent Takeaway Fish and Chip Shop of the Year Award in 2004.

Current qualifications include:

·City and Guilds Levels 1, 2 and 3 in catering

·Seafish Combined Customer Service Skills and Fish Frying

 

Hugh Mantle - Trainer
Hugh Mantle

Hugh has had ten years of experience working in the fish and chip industry which includes setting up the first drive through shop in the UK.

He has held many senior manager positions in the catering and leisure industry and currently works with various top retailers on their customer service and food safety skills.

Hugh has completed both level 4 Food Hygiene and Health & Safety and holds a professional trainers certificate. He is also an assessor for the NFFF Fish and Chip Quality Award and a Seafish approved assessor for the Fish Frying and Customer Service Qualifications.


 

David Miller - Trainer

David owns Millers Famous Fish and Chips in Haxby, York. David has been working in the fish and chip industry for many years and also has many years of experience working as a chef at some top end restaurants across the world. These include a Michelin star restaurant in Gentihomme and working on the QE2.

Millers Famous Fish and Chips have been Quality Award holders since 1997, first through Seafish and more recently with the NFFF, and have held the award continuously. Millers currently hold a 5 star FSA food hygiene rating and are MSC certified.

Millers Famous Fish and Chips were announced as 3rdplace in the Independent Fish and Chip Takeaway category at the National Fish and Chip Awards 2017 in which they were crowned the North East Regional Winners.

Cem Oktem -Trainer

Cem is the manager of family owned Packet Bridge Fish and Chip Shop based in Bolton Le Sands in Lancashire. Involved with fish and chips for over 9 years, Cem has a great passion for raising standards within the industry.

Packet Bridge Fish and Chip Shop is a current NFFF Quality Award holding shop and a 5 star FSA food hygiene rating holder. Cem was also a finalist in the 2013 and 2014 Drywite Young Fish Frier of the Year Competition.

Arthur Parrington - Trainer
Arthur Parrington

Arthur entered the trade towards the end of 1965 and has since held every official position within the NFFF. He played a major role in the development of the Friers Quality Award (A.K.A. NFFF Fish and Chip Quality Award) and the creation of the qualifications in Frying Practice and Customer Service now available to all fish friers.

Serving as a judge in the final of the Fish and Chip Shop of the Year Competition for ten years gave him a broad understanding of practices throughout the UK and he served for ten years as the Federation's Training Co-ordinator. He holds an Advanced Hygiene Qualification together with City and Guilds Trainers certification coupled with their Assessor and Internal Verifier qualifications.

John is the co-owner of Penaluna’s Famous Fish & Chips with son Lee, in Hirwaun, South Wales. He became involved with the Fish & Chip Industry in 2004.

 

Penalunas we have achieved top 60 placing in the Independent Fish & Chip shop section of The National Fish & Chip Awards for 6 consecutive years, winning the Region of Wales in 2015. In 2016 Penalunas were finalists in the Field to Frier, Staff Development & Training and Healthy Eating categories at the National Fish & Chip Awards.

 

John has been a NFFF Regional Representative in Wales for 4 years and represent industry at Seafish Wales Advisory Committee and Seafood Network Training Wales.

 

Penaluna’s Famous Fish & Chips are current NFFF Quality Award holder as well as holding a 5 star FSA food hygiene rating alongside being MSC Certified.

Craig co-owns Kingfisher Fish and Chips with his partner Nikki Mutton. Kingfisher Fish and Chips is the current UK’S No.1 Fish and Chip Shop after recently winning the prestigious title at the National Fish and Chip Awards.

Craig has been involved with the fish and chip industry since 1998 and since becoming the owner of Kingfisher Fish and Chips in 2012 and has achieved unprecedented success.

Kingfisher Fish and Chips is a current NFFF Quality Award holder as well as holding a 5 star FSA food hygiene rating and being MSC certified. They have won numerous other awards including Good Catch Winner 2016, NFFF Quality Award Champion Award Winner 2015, Best MSC Menu 2016, 3 Star Rating Sustainable Restaurant Association plus many more.

Simpsons Fish and Chip Shop was the winner of the 2016 Independent Takeaway Fish and Chip Shop of the Year and has won numerous other categories at the National Fish and Chip Awards including Field to Frier. Simpsons have been the Regional Champion and runner up for two years.

Simpsons Fish and Chips currently hold the NFFF Quality Award, a 5 star FSA food hygiene rating and are MSC certified.

Dennis Tate -Trainer
Dennis Tate

Dennis opened his first fish and chip shop in 1965 and has been a tutor for the NFFF for the past 12 years. He also tutored for 6 years on the previous training course at the Ross Club in Cleethorpes.

He holds the Level 2 Health and Safety Qualification along Level 2 in Food Safety.


 

Anne Wallace OBE - Trainer

Anne owns Stockport based Taylor's Award Winning Fish & Chips. Involved with the fish and chip industry for over 50 years, Anne is passionate about training and development, especially in young people and is a keen supporter and promoter of apprenticeships within the industry.

Taylor's Award Winning Fish & Chips currently hold the NFFF Quality Award and have held 5 stars in the FSA food hygiene rating for the past 15 years.

Geoff Whitehead - Trainer

Geoff owns Whiteheads Fish and Chip Takeaway and Restaurant in Hornsea, East Yorkshire. Geoff has been involved with the industry for over 20 years and is keen to pass on his skills and knowledge. Geoff also has experience of working on a fishing trawler.

Along with being a 5 star FSA food hygiene rated shop Whiteheads are current NFFF Quality Award holders

NFFF Facilities

The NFFF Head Office in Leeds has many facilities that benefit members including meeting rooms, catering facilities and tutor rooms. These facilities are made available to NFFF members. The NFFF Head Office is conveniently placed in a central location within three miles of Leeds City Centre, Leeds Railway Station, major connecting roads and Leeds/Bradford International Airport.

Nearby hotel accommodation is also available which can be booked through the NFFF Head Office at very reasonable rates or alternatively you could try an online booking facility.
