Nick Miller of the UK's number 1 fish and chip shop in the UK announced as the guest frier on the December three day training course

The National Federation of Fish Friers (NFFF) are delighted to announce Nick Miller of the Millers Fish and Chips will be our guest frier on the December three day training course: NFFF Complete Guide to Fish and Chip Shop Management.

Millers Fish and Chip shop in Haxby, York are the current UK’s number 1 fish and chip shop after achieving the prestigious title at the 2018 National Fish and Chip Awards.

The course commences on Monday 3rd December, concluding on the Wednesday 5thDecember. Nick will assist the NFFF training team for one day and will share with you his knowledge and experience of his journey in the industry and the awards.

The course will cover:

  • Product sourcing
  • Fish, potato and batter selection and preparation
  • Types of oils and fats
  • Hands on cooking including correct frying temperatures, range management and portion control
  • Oil management
  • Food Hygiene
  • Health and Safety requirements
  • Managing accounts
  • Dealing with VAT
  • Customer service
