NFFF guest frier announced for October three day course

The National Federation of Fish Friers (NFFF) are delighted to announce Pete Calvert of Mister Cís will be our guest frier on the October three day training course: NFFF Complete Guide to Fish and Chip Shop Management.

Pete was named Drywite Young Fish Frier of the Year at the 2018 National Fish and Chip Awards. As a shop Mister C's are currently in the final 10 for Independent Takeaway Fish and Chip Shop of the Year Award for 2019 and have won numerous awards including,

  • From Field to Frier Award Winner 2018
  • North East Regional winner for Independent Takeaway of the year 2015 & 2016
  • NFFF Quality Award holders since 1995
  • Ben Shaws Favourite Family Chippy Award 2010
  • MSC Certified
  • Investors in People accreditation since 2006
  • Five star Food Hygiene rating since 2000

The course commences on the Monday 1st October, concluding on the Wednesday 3rd October. Pete will assist the NFFF training team for one day and will share with you his knowledge and experience of his journey in the industry and the awards.

The course will cover:

  • Product sourcing
  • Fish, potato and batter selection and preparation
  • Types of oils and fats
  • Hands on cooking including correct frying temperatures, range management and portion control
  • Oil management
  • Food Hygiene
  • Health and Safety requirements
  • Managing accounts
  • Dealing with VAT
  • Customer service
