The National Federation of Fish Friers (NFFF) are delighted to announce that one of the finalists of this year’s ‘UK Independent Takeaway Fish and Chip Shop of the Year’, will be our guest frier on the February Three Day Training Course: NFFF Complete Guide to Fish and Chip Shop Management.

• Fylde Fish Bar, Marshside, Southport, Merseyside (North West England)
• The Golden Carp Chippy, Redditch, Worcestershire (Midlands)
• Burton Road Chippy, Lincoln, Lincolnshire (Eastern England)
• Henley^s of Wivenhoe, Wivenhoe, Colchester, Essex (London & South East England)
• Captain’s Fish and Chips, Hoddesdon, Hertfordshire (Central & Southern England)
• Harbourside Fish & Chips, Plymouth, Devon (South & West England)

This course commences on the Monday 12th February, concluding on the Wednesday 14th February. The guest frier will assist the NFFF training team for one day and will share with you their knowledge and experience of their journey in the industry and the awards. 

The course will cover:

• Product sourcing
• Fish, potato and batter selection and preparation
• Types of oils and fats
• Hands on cooking including correct frying temperatures, range management and portion control
• Oil management
• Food Hygiene
• Health and Safety requirements
• Managing accounts
• Dealing with VAT
• Customer service
